Vegetarian Microwaveable Muffin


This is an easy vegetarian muffin recipe that takes LESS than 5 minutes!

Oat flour benefits:

- can help to reduce cholesterol

- high dietary fibre

- low calories

- complex carbohydrate




































Low fat cheese:

- low saturated fat

- can reduce the risk of heart disease and stroke

- calcium can help reduce blood pressure

- source of protein and fats
































Vegetables:

- positive effect on blood sugar levels

- high amounts of vitamins, minerals, and dietary fiber

- rich in antioxidant properties





















Ingredients:

  • 1 cup vegetables (tomato, onion, garlic, pimento, chive, oregano, bell pepper, mushroom)

  • 1/4 cup cooked red beans

  • 1/2 cup oat flour

  • 1 oz. mozzarella cheese

  • 1 tsp. baking powder




Method:

Wash and slice favourite vegetables. Mix all ingredients together and add to a small bowl with parchment paper. Microwave for 2-4 minutes with 30 second intervals. Add low fat mozzarella cheese to the top and enjoy.
