Mini Oat based cup left over pizza

I love oats and I used it as the base because of the many benefits. This was an easy, simple cup pizza. It took about 30 minutes maximum including preparation and cooking.


Honestly, I used what was in the fridge! It was lunch time and I was getting hungry but I needed something quick and easy to prepare.




Mixed vegetable benefits:

> can increase metabolism

> high dietary fibre

> keeps you full for longer

> heart healthy




Oats:

> High dietary fibre

> Good source of complex carbs.

> Helps to reduce bad cholesterol




Mozzarella cheese benefits:

> lower saturated fat

> Good source of protein

> Good for bone health





Ingredients:

  • 5 oz cheese

  • 1-2 cup vegetables (mushrooms, string beans, bell peppers, carrots, broccoli)

  • 1 cup oats

  • 1 tsp. baking powder

  • 1/3 cup tomato paste

  • seasonings (oregano, basil, parsley, onion, garlic, chive, pimento, and any seasoning you like)




Method:

Wash and slice vegetables if needed. Blend oats and add seasonings. Add some water and combine with baking powder.


Add parchment paper to baking tray. Roll oat mix into balls and flatten to the shape of the cupcake holders. Add some tomato paste, vegetables and top with cheese.


Bake for 15 mins or until cooked. Enjoy.





Serving size: avg. 7 pizza cups (depends on the size of the cupholders)
