This was a super easy vegetarian one pot dish. Don't spend too much time standing in the kitchen. It's so delicious and sweet! I love it.

Ingredients:
1 large plantain
1 oz mozzarella cheese
1-2 cup vegetables (spinach leaves, mushrooms, string beans, bell peppers, carrots, broccoli)
seasonings (oregano, basil, parsley, onion, garlic, chive, pimento, and any seasoning you like)
Method:
Boil plantain until cooked for about 10-15 minutes. Add vegetables and low fat cheese when close to completion with seasonings.
Enjoy when cool.
