Eggplant pizza turned into a sandwich


This was a super delicious light dinner recipe. It's vegetarian and really easy to prepare.

Ingredients:

  • 1 large eggplant

  • 6 oz. mozzarella cheese

  • 1 cup vegetables (mix pack has corn, carrots, peas) you can add you favourite toppings e.g. bell peppers, tomatoes, onion etc.

  • tomato paste to put about 1 tbsp. on each slice

  • seasonings (oregano, pimento, onion, garlic)




Method:

Slice the eggplant into circles. Add it to a baking dish. You can base the tray with foil or parchment paper. Place a few of your favourite vegetable toppings on the eggplant slices and add cheese on top. Bake for 30 minutes or until cooked.


You can also take extra slices and make a sandwich like the image below:
