This meal can actually be used for lunch OR dinner. Everything was done within 15 minutes, but baking took about an hour. It's a meal that can be left to cook while you do other tasks e.g. work.
Another way to speed up the process is to boil the chicken and potato beforehand for 15 minutes. It would cook faster.
Mixed vegetable benefits:

Ingredients:
1 leg and thigh OR 1 chicken breast
1 cup vegetables (mushrooms, string beans, bell peppers, carrots, broccoli)
1 large potato
seasonings (oregano, basil, parsley, onion, garlic, chive, pimento, paprika, geera and any seasoning you like)
Method:
Wash and slice vegetables if needed. Rinse and scrub potato. De-skin and remove visible fat from chicken. Season everything well and cover in foil. Bake for an hour or until cooked. Enjoy.
