Didi's Quinoa Fritter

It's time for another vegetarian recipe!


It's surprisingly super delicious! This recipe I created on my own! EGGLESS and high dietary fibre packed with nutrients!







Mixed vegetable benefits:

> can increase metabolism

> high dietary fibre

> keeps you full for longer

> heart healthy



Spinach benefits:

> High dietary fibre

> Rich in vitamins and minerals

> Good source of iron



Quinoa benefits:

> High dietary fibre complex carbohydrate

> Rich in antioxidants

> Manages blood sugar levels



Mozzarella cheese benefits:

> lower saturated fat

> Good source of protein

> Good for bone health



Oat flour benefits:

> Helps to lower bad cholesterol

> High dietary fibre





Ingredients:

  • 1-2 cup vegetables

  • 1-2 oz cheese

  • 1/2 cup oat flour and flaxseed

  • 1/2 cup quinoa

  • 2-3 tbsp. oil

  • seasonings (oregano, basil, parsley, onion, garlic, chive, pimento, and any seasoning you like)




Method:

Boil quinoa until cooked with seasonings.


Chop vegetables into small pieces. Add spinach leaves and chopped vegetables to quinoa. Slice cheese and allow everything to combine.


Add oat flour and flaxseed to the mixture and form shapes. Grill on both sides with some oil. Enjoy with homemade tomato paste.


Serving size: avg. 1-2
